Apricot Tart

Due to the high temperatures last week, the fruit on my apricot tree ripen very quickly. I have given some of the fruit to my one neighbor since she loves apricots.

My fruit bin in the refrigerator holds some of the fruits that I picked so that the squirrels and birds don't get to all of the fruit. I'm leaving the fruit on the top of the tree for the birds to enjoy. One year I canned apricots, but I prefer just storing the fruit cold and then eating the apricots out of the bin or using them in tarts and cakes.
